Easy Banana Chocolate Chip Cupcakes (Muffins)
These fluffy dreamy cupcakes are a piece of cake to put together.
Banana Chocolate Chip Cupcakes
Ingredients
1 box yellow cake mix
3 very ripe bananas (abt. 1 1/2 cups)
1/2 cup water
1/4 cup oil (or applesauce)
3 large eggs
1 tsp. vanilla extract
1 cup chocolate chips (mini or regular)
Preheat oven to 375 Mix everything together till only small lumps remain.
Put 18 cupcake papers into 2 cupcake pans. Fill them 3/4ths full of batter. Fill the empty wells 1/2 full with water.
Bake for 18-22 minutes.
Notes: Change up the recipe with a different cake mix such as strawberry or chocolate. Both are winners. Let me know what you try and how it turns out.
Other variations Carrot cake cupcakes: Change the bananas to grated carrots; either use a spice cake mix or add 2 tsp. cinnamon and 1/2 tsp. nutmeg to the yellow cake mix. You can also use a 15 oz can of pumpkin with a yellow or spice cake mix. The chocolate chips are optional in all three recipes.
These are great with or without cream cheese frosting.

Bump up the flavor on a boxed cake mix. This is a great easy way to make muffins or cupcakes. We used it both ways and have never had anyone complain.
