Banana Protein Pancakes
Simple protein-packed breakfast.

Banana Protein Pancakes
Ingredients
1 1/2 cups cottage cheese
1 large very ripe banana, mashed
2 eggs
1/4 cup canola oil
1 tsp vanilla extract
2 tbsp sugar
1 tbsp baking powder
1 cup flour
½ tsp. salt
Mix cottage cheese, banana, eggs, oil, vanilla in one bowl.
In another bowl mix the other ingredients.
Combine the two. Don't overmix.
Pour ¼ cup on a hot greased skillet.
Cook for about 2-3 minutes.
Flip and cook for another 2 minutes.
